Ramadan recipe of the day: Burrata butter chicken

This is not your ordinary butter chicken. The simple addition of burrata, a cheese made from mozzarella and cream, elevates the popular Indian curry. Grab a naan or a bowl of rice and experience the rich, creamy flavors for yourself.


For the sauce

  • 2 tablespoons oil
  • 3 (our) green cardamom
  • 4 (our) bay leaves
  • 2 (our) black cardamom
  • 3 tablespoons red chili paste
  • 3 fresh tomatoes
  • 3 tablespoons of tomato paste
  • 3 tablespoons cashew nuts
  • ½ teaspoon of salt
  • 2 tablespoons of butter
  • 1 tablespoon of honey
  • ½ cup of water
  • ½ teaspoon kasoori methi
  • 3 tablespoons cooking cream

For the chicken tikka

First marinade

  • 180g chicken cubes
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • ½ teaspoon of salt

Second marinade

  • 2 tablespoons suspended curd
  • ½ tbsp salt
  • 2 tablespoons red chili paste
  • 1 pinch of cumin powder
  • 1 pinch of garam masala
  • 1 pinch of kasoori methi
  • ½ teaspoon powdered green cardamom
  • ½ teaspoon chaat masala


Makhani Sauce:

Boil the cashew and grind it into a paste. Make a puree of peeled tomatoes and set aside.

Heat oil add bay leaves, green and black cardamom, ginger-garlic paste, red chili paste and cook well for some time

Add the tomato puree, tomato paste and cashew nut paste, stirring and cook well.

Finish it with butter, salt, honey, cardamom powder, kasoori methi and cooking cream.

Chicken Tikka

Apply the first marinade to the chicken cube and place it in the refrigerator for 30 to 35 minutes.

In a bowl, combine all the ingredients for the second marinade and whisk well until you obtain a smooth paste.

Add the marinated chicken to the second marinade before cooking.

Let the chicken sit in the second marinade for at least 35-40 minutes.

Skewer the chicken cube and cook it in the clay oven

In a serving bowl, add makhani sauce to grilled chicken tikka and top with burrata cheese
